This strawberry mint mojito cocktail is a fruity twist on the classic mojito we all know and love. It's made with fresh strawberries, fresh mint, lime juice, white rum, and fizzy soda - aka the ultimate summer drink.
1ouncemint simple syrup (recipe below in notes)(or regular simple syrup)
4ouncesclub soda(or soda water)
1cupice cubes
Optional garnishes: mint sprig, sliced lemon, fresh strawberries
Instructions
Add the mint leaves and mint simple syrup to a cocktail shaker or mason jar. Gently muddle with a muddler or the back of a wooden spoon until fragrant.
Add the fresh strawberries and muddle until they release their juices.
Add the white rum and fresh lime juice. Fill the shaker with crushed ice, cover, and shake well (about 15 seconds).
Fill a tall glass or collins glass with ice, and optional berries or mint leaves. Strain the mojito mixture into the glass.
Pour the club soda over top and stir gently to mix.
Add a mint sprig, a lemon slice, or a few extra berries for a festive touch. Serve immediately.
Notes
Simple Syrup Tip: To make mint simple syrup, combine ½ cup water and ½ cup sugar in a saucepan. Heat until dissolved, stir in ½ teaspoon mint extract and let cool. Store in a covered jar in the refrigerator for up to 2 weeks.

Make Ahead: You can pre-muddle the base in a pitcher and top with club soda just before serving.
