This easy raspberry mojito recipe is fresh, light, and full of flavor. Made with muddled raspberries, mint, lime juice, white rum, and topped with club soda or seltzer water, it's one of the best refreshing cocktails for a hot summer day, backyard BBQ, or relaxing on the patio.
1tablespoonmint simple syrup(or simple syrup or agave, adjust to taste)
1ouncefresh lime juice
1-2ounceswhite rum or silver rum(such as Havana Club)
½cupclub soda or seltzer water(or lemon lime soda for a sweeter drink)
1-2cupsice cubes
lime wedges or slices of limefor garnish

Instructions
Add the mint leaves and simple syrup (or agave) to a sturdy glass or cocktail shaker. Use a muddler (or the back of a spoon) to gently press the mint and release the oils.
Add the fresh raspberries and muddle again until they break down and release their juice. The mixture should look slightly pulpy.
Pour in the fresh lime juice and white rum (1-2 shots depending on preference).
Add a handful of ice cubes and stir or shake for about 10 seconds until well chilled.
Strain into a tall glass filled with fresh ice, or pour everything in if you prefer a more textured drink.
Top with club soda or seltzer water and gently stir to combine.

Notes
Muddling. Use a muddler or spoon and press gently; over-muddling mint can make it bitter.
Sweetness. Adjust the simple syrup or agave depending on how sweet you like your drink. If using lemon lime soda, reduce the sweetener slightly.

Make a pitcher. This recipe easily scales up for guests. Multiply ingredients by 4-6 and mix everything except the soda water in a pitcher. Add ice and soda water just before serving to keep it fizzy.
