Ingredients
1
cup
frozen pineapple chunks
(or fresh pineapple)
½
cup
ice cubes
(or 1 cup if using fresh pineapple)
1½
ounces
tequila
(Blanco recommended)
1
ounce
Triple Sec
(or Cointreau)
1
ounce
lime juice
(fresh is best)
2
ounces
simple syrup
(see Note below)
coarse salt or sugar
(for rimming the glass)
lime wedge or pineapple slice
for garnish
(optional)
Instructions
Rim the Glass:
Run a lime wedge around the edge of a glass and dip it in coarse salt or sugar. Set aside.
Blend:
Add frozen pineapple, ice, tequila, triple sec, lime juice, and simple syrup to a high-speed blender. Blend until smooth and slushy.
Serve:
Pour into the prepared glass and garnish with a lime wedge or pineapple slice. Serve immediately.
Notes
Mocktail Version:
Omit the tequila and triple sec. Replace with 1 oz orange juice and a splash of coconut water.
Pitcher Option:
To make 4 drinks, multiply ingredients by 4 and blend in batches.
Storage:
Best served immediately, but can be frozen for up to 30 minutes before serving. Stir or blend again briefly before pouring.
