Instructions
Add the ingredients. Add the frozen strawberries, Bacardi rum, lime juice, and simple syrup to a high-powered blender.
Blend. Blend on high until completely smooth and slushy.
Adjust if needed. Taste and add more simple syrup for sweetness or lime juice for more tartness. If you prefer a thicker, icier daiquiri, add a small handful of ice and blend again.
Serve. Divide between two cocktail glasses. Garnish with fresh strawberries and lime wedges, if desired, and serve immediately.
Notes
Frozen strawberries: I prefer frozen strawberries because they give the daiquiri a thick, slushy texture without requiring much added ice.
Using fresh strawberries: You can use 1½ cups fresh strawberries instead. Add a handful of ice and blend, adding more ice as needed until you reach your desired consistency.
Simple syrup: To make your own, combine equal parts granulated sugar and water in a small saucepan. Heat, stirring, just until the sugar dissolves. Cool completely before using.
Adjust the sweetness: Strawberries vary in sweetness, so taste the daiquiri after blending before adding additional simple syrup.
Other white rum: Bacardi is used in this recipe, but another light or white rum can be substituted.
Virgin strawberry daiquiri: Omit the rum and add a splash of water, lime juice, or fruit juice as needed to help the strawberries blend.
Serve immediately: Frozen daiquiris are best served straight from the blender before they begin to melt.
